Cachaca cocktails

Caipirinha

Cachaça muddled with lime and sugar — Brazil's national drink, rustic and zesty.


Ingredients

  • 1, in wedges lime
  • 20 ml simple syrup
  • 60 ml cachaca

Method

  1. 1Muddle the lime wedges with the syrup in a rocks glass.
  2. 2Fill with crushed ice and add the cachaça.
  3. 3Stir well.

PRO TIP

Muddle gently — crush the juice out, not the bitter white pith.

Rabo de Galo

Cachaça stirred with sweet vermouth and Cynar — Brazil's bittersweet answer to the Manhattan.


Ingredients

  • 60 ml cachaca
  • 20 ml sweet vermouth
  • 15 ml cynar
  • 2 drops angostura bitters

Method

  1. 1Build all ingredients over ice in a rocks glass.
  2. 2Stir briefly.

PRO TIP

The name means 'rooster's tail' — a Brazilian bar staple.
