Naked and Famous

Equal parts mezcal, yellow Chartreuse, Aperol and lime — smoky, bitter and bright at once.


Ingredients

  • 22 ml mezcal
  • 22 ml yellow chartreuse
  • 22 ml aperol
  • 22 ml lime juice

Method

  1. 1Shake all four equal parts with ice.
  2. 2Double-strain into a chilled coupe.

PRO TIP

A modern equal-parts riff on the Last Word — measure precisely.

Garnish — None


Illegal

✦ Proven classicMediumCoupe

Mezcal and overproof rum with falernum and lime — smoky, tart and built to bite.


Ingredients

  • 30 ml mezcal
  • 15 ml white rum
  • 15 ml falernum
  • 1 bar spoon maraschino liqueur
  • 22 ml lime juice
  • 15 ml simple syrup
  • few drops egg white

Method

  1. 1Shake all ingredients vigorously with ice.
  2. 2Strain into a chilled cocktail glass, or over rocks in a clay mug.

PRO TIP

Overproof Jamaican rum and espadín mezcal give it the backbone.

Oaxaca Old Fashioned

Reposado and mezcal sweetened with agave — a smoky, modern take on the original.


Ingredients

  • 45 ml reposado tequila
  • 15 ml mezcal
  • 5 ml agave syrup
  • 2 dashes mole bitters

Method

  1. 1Stir all ingredients with ice until cold.
  2. 2Strain over a large cube in a rocks glass.
  3. 3Flame an orange peel over the top.

PRO TIP

The mezcal is a seasoning, not the base — a little smoke goes far.
