Aperol Spritz

Low, fizzy and sunset-orange — the easiest aperitivo to love.


Ingredients

  • 90 ml prosecco
  • 60 ml aperol
  • 30 ml club soda

Method

  1. 1Fill a wine glass with ice.
  2. 2Add prosecco, then Aperol, then a splash of soda.
  3. 3Stir gently once.

PRO TIP

Prosecco first so it doesn't foam over when the Aperol goes in.

Garnish — Orange slice


Porn Star Martini

Vanilla vodka and passion fruit with a Champagne sidecar — the modern bar megahit.


Ingredients

  • 50 ml vodka
  • 20 ml passion fruit liqueur
  • 50 ml passion fruit syrup
  • 10 ml vanilla syrup
  • 50 ml prosecco

Method

  1. 1Shake the vodka, liqueur, passion fruit and vanilla hard with ice.
  2. 2Double-strain into a chilled glass.
  3. 3Serve the sparkling wine alongside in a shot glass.

PRO TIP

Sip the cocktail and the Champagne shot in alternation — that's the ritual.

Bellini

Prosecco over white-peach purée — a soft, blushing Venetian aperitivo.


Ingredients

  • 50 ml peach juice
  • 100 ml prosecco

Method

  1. 1Add the peach purée to a chilled flute.
  2. 2Top slowly with prosecco and stir once.

PRO TIP

White-peach purée is traditional — fresh and unsweetened beats syrupy nectar.

Old Cuban

A grown-up mojito — aged rum, mint and lime lengthened with Champagne and bitters.


Ingredients

  • 45 ml dark rum
  • 22 ml lime juice
  • 30 ml simple syrup
  • 6 leaves mint
  • 2 dashes angostura bitters
  • 60 ml prosecco

Method

  1. 1Shake everything except the sparkling wine with ice.
  2. 2Double-strain into a chilled coupe.
  3. 3Top gently with prosecco or Champagne.

Garnish — Mint sprig


Russian Spring Punch

Vodka, cassis and lemon topped with sparkling wine — a fizzy, berry-bright cooler.


Ingredients

  • 25 ml vodka
  • 25 ml lemon juice
  • 15 ml creme de cassis
  • 10 ml simple syrup
  • to top prosecco

Method

  1. 1Shake everything except the sparkling wine with ice.
  2. 2Strain into an ice-filled tall glass.
  3. 3Top with prosecco or Champagne.

Negroni Sbagliato

A Negroni 'mistaken' with sparkling wine instead of gin — lighter, fizzier, just as ruby.


Ingredients

  • 30 ml campari
  • 30 ml sweet vermouth
  • 60 ml prosecco

Method

  1. 1Build Campari and vermouth over ice.
  2. 2Top with prosecco and stir gently.

PRO TIP

'Sbagliato' means 'mistaken' — prosecco poured in place of gin.

Hugo Spritz

Prosecco, elderflower, mint and lime — a lighter, floral alternative to the Aperol Spritz.


Ingredients

  • 30 ml elderflower liqueur
  • 10 ml lime juice
  • 4 leaves mint
  • 90 ml prosecco
  • splash club soda

Method

  1. 1Add elderflower, lime and mint to an ice-filled wine glass.
  2. 2Add prosecco, then a splash of soda.
  3. 3Stir gently.

PRO TIP

Slap the mint before adding it to wake up the aroma.
